Eat + Drink
Dining at Populus
At Populus, food is an extension of place. Inspired by the pacific Northwest and the seasons around us, our dining experiences bring fresh, thoughtful ingredients to the table through inventive cuisine, craft cocktails, and warm hospitality. Every space is designed to gather, savor, and connect.
Salt Harvest
Salt Harvest is a rustic yet refined restaurant in Pioneer Square. Open flame, smoke, and char shape a menu built around the seasons and the region’s natural bounty. Diners can expect fresh seafood, locally grown produce, and sustainably sourced meats. Join us for an all-day meal, a seat at the Chef’s Counter, or dinner beneath the hanging greenery of The Solarium.
Firn
Firn pairs skyline views with a simple food offering that complements the creative, ingredient-focused cocktail program. The menu is centered on the craft of preservation with a focus on capturing the region’s produce, meats, and fish in peak season, then pickling, canning, and preserving to serve throughout the year. Join us for rooftop drinks and a birds-eye view of Pioneer Square.
